Guest conductor Kobe Achu\, Cadet First Class and Cadet Choir Director at the U.S. Air Force Academy\, will lead O America as part of the program. Learn about the most current Colorado Cottage Food Act. \nThe main sections of the training cover food safety guidelines for preparing foods in a home kitchen which is different from a food service site that would be inspected by the County and/or State Health Depts. We cover the basics of proper hygiene; preventing cross-contamination and cross-contact of food allergens; temperature control for safe food preparation\, storage\, transporting produce and sales. The allowable food products are highlighted with CSU Extension fact sheets provided for each food product allowed. Abby Nelson will perform the 1st movement of the Haydn Cello Concerto in C major. The concert includes: Beethoven “Coriolan Overture”\, Borodin “Symphony 2”\, Ravel “Bolero”\, and Rossini “Barber of Seville Overture”. Our Music Director\, Dr. Luciano R. Silvestri\, Jr.\, will provide interesting background information about the pieces we will perform beginning at 2:15 before the concert.

Project— Apple Preservation 🍎 Planting 🍎 Land Education — who wants to build practical skills for resilient orchard care. \n \nWhat You’ll Learn:\n\nHow to identify common apple tree pests such as codling moth\, aphids\,etc\nHow to recognize symptoms of fire blight\, powdery mildew\, and Cytospora canker\nIntegrated Pest Management (IPM) strategies using organic & conventional methods\n\n \nIncluded with Registration:\n\nA Pest and Disease Monitoring or Mitigation Kit to help you get started at home\nAccess to expert instruction from CSU Extension educators\nAccess to El Paso Conservation District subject matter experts\nConnection to a growing network of local landowners and orchard enthusiasts\n\n \nRequired for the Tree Incentive Program\nThis class is one of three required workshops (see below) for participants in the A.P.P.L.E. Project’s micro-orchard initiative. Project\nWhile this class is not required for the A.P.P.L.E. Project’s tree incentive program\, it provides valuable skills for making the most of your orchard’s harvest and deepening your connection to Colorado’s apple-growing heritage. \n\nApple Heritage & History in the Pikes Peak Resion Class– October 15\, 2025Explore the rich history of apple cultivation in the Pikes Peak Region with a lecture led by the Director of the McAllister House Museum. Discover the legacy of local orchards and heritage varieties.\nApple Preservation Class #1 – October 22\, 2025Hands-on class in water bath canning and other apple preservation techniques – such as freezing and dehydrating. Participants take home what they make – shelf-stable apple pie filling – and receive a starter canning kit.\nApple Preservation Class #2 – October 19\, 2026 – Check back in 2026 for the link.Repeat of Apple Preservation 2025 class. This is a Hands-on class in water bath canning and other apple preservation techniques – such as freezing and dehydrating.
